Another recipe for which there are thousands of variations. However this is one of the easiest. It’s another recipe I don’t really measure so the measurements here are a guide only.
2-3kg bone in pork shoulder
2-3 medium sized brown onions sliced.
3-4 cloves of garlic
2 cups of chicken stock
2 tblsp of brown sugar
1-2 tsp of chilli powder
1-2 tsp of sea salt
1 tsp ground cummin
1/2 tsp cinnamon
BBQ sauce to taste.
Remove the rind from the pork with a sharp knife. (set aside and bake separately)
Rub the pork all over with the dry mix of cummin, cinnamon, salt, chilli powder and sugar. (increase or decrease ingredients to taste)
Place chicken stock, sliced onions and garlic in the bottom of slow cooker.
Place meat on top of slow cooker and cook for 4-6 hours on high or 6-8 hours on medium.
When cooked remove pork from cooker and pull apart using two forks or a pair of “Bear Claws.”
Pour remaining slow cooker contents through a strainer keeping all but the chicken stock.
Put meat and onions back into slow cooker and stir through BBQ sauce. (Flavoured BBQ sauce, smoked BBQ sauces etc work well too)
Serve by itself or in a bun with coleslaw.
